This is a really great drink for you home gardening folk who end up with way too many cucumbers during the summer season, and not enough recipes to use them in! It is a wonderful, refreshing cool summer drink, and doesn’t taste anything like some yucky, vegetable thing you throw together just to get rid of the extra produce. Everyone in my family decided we liked it as much as lemonade.

We found the recipe in Hobby Farm Home magazine, and modified it, because the yield in the original was too small.

Hobby Farm Home is a great magazine for the small farmer/large gardener, full of useful tips. One of the best things about the recipes is they are simple and don’t require ingredients you can’t easily find in country stores. Ironically, the latest issue had a guest chef with a huge list of whatevers for all his recipes, including stuff that should be easy, like fried green tomatoes. We ignore people like that.

4 medium cucumbers, peeled, seeds removed, chopped.
1/2 cup lime juice
4 cups ice
1 cup sugar

Stick it in a blender and puree. I like mine slightly chunky. You may prefer a smoother texture. Whatever rocks your world. Serve immediately.

This recipe is simple to break down into smaller portions: 1 cuke, 1/8 cup lime, 1/4 cup sugar, 1 cup ice per person.
